Yes 650 EVGA G2 would work fine. As long as your not using something like a 8 / 10 core Heavily overclocked CPU and hammer it with heavy synthetic stress testing.

Also, I know I can use a different brand 1070 card since they have the same ship set but which cards have the same height so I don't have an issue with the high bandwith bridge connecting?

Some cards have a custom PCB and are thus wider then other models. Only reference boards would consistently work with one another as they use the same measurements. For aftermarket cards with custom PCB's you will need to double check the width.
