Is there a graphics card that is better than the 580 for around the same price, trying to keep this build as close to $900USD as possible so feel free to change other parts to find the money for a better card.

For $40 more you can get a `1660. It is more powerful and better price to performance. You can get that money by going with a 1600 instead of a 2600x. Just overclock the 1600 and it will be almost the same as far as performance.

I figured getting a 480gb ssd that's the same quality internal wise as the l5 lite 3d will slightly improve your list.

I wasn't planning on overclocking anything due to me being a PC Noob and not wanting to fry anything. Would the 1660 give me a somewhat significant FPS increase? I know the 1660 has a better clock speed however it is only 6GB while the RX 580 is 8. Would less GB with a higher clock speed be better than the opposite? Sorry, I'm new to this and just trying to understand.

The 1660 is more powerful than the 580. And the only way you are going to get even close to the 6gb limit on the 1660 is playing at 4k, which you aren't. On average the 1660 is about 20-30% faster but that will depend on the game.

As far as overclocking there are plenty if tutorials on youtube. I wouldn't worry about frying anything if you just follow those. The 1600 should be able to hit 3.6-3.8ghz easy.

You are comparing apples to potatoes. You can not compare VRAM size and clock speeds across different GPU's. There is ton more to GPU's than that (which is honestly probably pointless to dive into to, just use benchmarks)
